Step By Step Process

First, we’ll start with the wings. You will want to start by patting your wings dry with a paper towel. this takes away the excess moisture leaving the skin extra crispy! Next, mix the baking powder, salt, pepper, paprika, and chili powder seasonings into a bowl with the chicken wings. toss them until coated evenly. Place them on a wire rack, and put them in a fridge for up to 2 hours for the seasonings to impress into the skin.

Now that the wings are brining. We prepare the sauce. First, Cut or Dice the mangos, habaneros, ginger, and garlic.(Note: The more habanero seeds that are used, the spicier the sauce will be.) After everything is cut, put the mangos and habaneros in a blender with rice vinegar, brown sugar, and soy sauce. Blend together until it becomes a puree. Make sure to taste the sauce, so you can make any changes before applying it to wings. Next, heat a saucepan with olive oil, ginger, garlic, and cook until fragrant. After that, add the puree to the saucepan and bring it to a boil until it thickens.
