#1. Always cook by temperature of your meat when using a pellet smoker, it is a big mistake to solely rely on timing. Use an instant read or wireless temperature gauge for accuracy.
#2. Do not place your food on the edge of the grill – make sure to leave at a one-inch margin for the first inch as well as the last inch of the pellet smoker or your food may cook unevenly.
#3. Clean the thermostat to allow you to get the correct reading on your smoker. You can use a wipe or a steel wool pad to clean the thermostat probe.
