
One of the biggest grilling holidays of the year, the 4th of July, is only a couple of days away. The simple and easy choice would be to put some hot dogs and hamburgers on the grill, maybe make a potato salad and call it a day. If you wanted to mix it up for America’s birthday, this recipe for spicy honey lime chicken kababs is a good place to start!
First, you need to preheat your grill on medium-high heat and oil the grate. Next put the honey, Sriracha, and lime juice together in a small bowl and then whisk until homogenous. Then set aside for later. Next, sequence the chicken, red pepper, zucchini, pineapple, and red onion onto skewers and place them on a platter. Brush the skewers with olive oil, then season with salt, pepper, and garlic powder. Once the grill is heated to the required temperature, place skewers on the grate. Then close the grill lid and reduce heat to medium. Grill until chicken is cooked through, turning skewers every few minutes. Cook time is between 15 and 20 minutes. Once the chicken is fully cooked brush glaze on all sides of skewers during the last 2 to 3 minutes, turning into a lightly caramelized glaze. Once done transfer the kababs onto a serving platter and grate lime zest on top. Serve warm.
